Another day of great Paleo eating down. Today's going well, too. I'm continuing to feel better everyday, even with the allergies that fall brings. It's so nice to enjoy my meals. Before, the oatmeal and the egg whites made me want to gag in the morning. No flavor!! Zero enjoyment! And I would be starving while waiting for my next "meal" in three hours. This morning I had bacon & raw egg yolks, an idea that I saw on FastPaleo's website. It was delicious and filled me up to the brim. So easy, too!
Last night we had bacon-wrapped meatloaf and steamed cauliflower (well, I had steamed cauliflower, Phil had two helpings of meatloaf, instead :P). The entire loaf cost about $9 and there was more than half left after dinner last night. Healthy eating is NOT expensive, people!! Just buy the right things and then actually eat them instead of letting them go bad. Which reminds me, I have some ground beef to freeze!
I'm going to stay in a cabin in Hocking Hills tonight for a girls' night with my friend. I requested that she bring me pork rinds (not paleo in a strict sense, but a better choice than potato chips!) and I'm bringing the rest of the meatloaf from last night. For breakfast I'll have my grain-free blueberry muffins and butter. nomnomnomnom. My muffins didn't quite turn out as they should as I used the food processor to grind the almonds for the almond meal and it didn't get fine enough. Next time, I'll have to try the coffee grinder, instead (even though it will take some time to make 2.5 cups of meal in a coffee grinder!!!).
